Ash is a very good wood for making cutting boards. The hardness of Ash, as mentioned by the Janka Hardness scale, is around 1300. This is soft enough not to damage knives, yet hard enough not to be seriously damaged by knives. Ash is a very light color, so it fits into most kitchens.
The more common woods for cutting boards are maple, beech, cherry and walnut. Ash is not the most popular wood, but it has all the criteria for being an excellent choice for cutting boards, charcuterie boards and cheese boards.
